Ricotta and Vegetable Pasta

Ingredients:

   1      pound         Pasta -- angel hair if
					
   2      medium        Carrots -- scrubbed and
                        into matchstick size
   2      medium        Crookneck squash -- cut
                        matchstick size
   4                    Scallions -- chopped
   2      tablespoons   Olive oil
   2                    Leeks -- cleaned and sliced
   2      tablespoons   Calvert's cedar street -- Garlic mustard
   8      ounces        Ricotta cheese
     3/4  cup           Half-and-half
                        Freshly grated parmesan che
 

Preparation:

Ricotta and vegetable matchstick pasta. Heat olive oil and saute carrots over medium heat for 5 minutes. Add squash and scallions and saute for 3 more minutes. Cook pasta until al dente. Drain and return to pot. Toss with ricotta cheese, half-and-half mustard and sauteed vegetables. Heat quickly to warm. Serve topped with freshly grated Parmesan.
