Spicy Pork Satay

Ingredients:

     1/4           cup  dry roasted peanuts
     1/2           cup  low sodium soy sauce
  2                     garlic
  1           teaspoon  minced red chili peppers
  1           teaspoon  brown sugar
     1/8           cup  lemon juice
  1              pound  pork loin
  16                    bamboo skewer
                        peanut sauce
 

Preparation:

1. in a large bowl, combine peanuts, soy sauce, garlic, minced red chili peppers, brown sugar and lemon juice. 2. add strips of pork and mix together. 3. marinate for one hour. 4. thread pork onto skewers so that pork is flat out. 5. grill over hot coals or gas grill on high for 5-6 minutes on each side. 6. serve with peanut sauce.
