Savoory Pork Stir Fry

Ingredients:

  1              pound  pork tenderloin -- cut into 3/4inch cub
                        trim all visable fat
  1         tablespoon  vinegar
  1         tablespoon  reduced sodium soy sauce
  1           teaspoon  sesame oil
  1              clove  garlic -- minced
     1/2      teaspoon  ground ginger
  1            package  frozen stir fry vegetables -- 16oz, thawed
  1         tablespoon  water
 

Preparation:

Blend vinegar, soy sauce, oil, garlic and ginger in shallow dish. Add pork; marinate 10 minutes. Spray large nonstick skillet with vegetable spray. Heat skillet over medium high heat until hot. Add pork; stir fry 3 minutes. Stir vegetables and water into mixture. Cover; cook 5 mnutes or until vegetables are crisp tender. Servings: 4
