  25                    bamboo skewer
  1              pound  boneless pork
  1                cup  peanuts
     1/2           cup  scallions
  2          teaspoons  fresh lemon juice
  2          teaspoons  honey
     1/4           cup  soy sauce
  1           teaspoon  garlic
  1           teaspoon  ground coriander
     1/2      teaspoon  crushed red chiles
     1/2           cup  chicken stock
     1/4           cup  unsalted butter
 

Preparation:

cut pork into 1-inch cubes thread onto skewers place into a hotel pan combine peanuts, onions, lemon juice, honey, soy sauce, garlic, coriander, and chiles in a food processor process until smooth pour over skewered pork cover and chill 4-24 hours drain well, reserving marinade heat reserved marinade to a boil in a saucepan, over a high flame remove from heat grill or broil skewers until well browned and crisp, basting often arrange onto a serving platter serve hot or warm, with reserved marinade to the side
