Pork Roast - New Soul Food

Ingredients:

     1/3           cup  lite soy sauce
     1/2           cup  dry sherry
  2             cloves  garlic -- minced
  1         tablespoon  dry mustard
  1           teaspoon  ginger
  2          teaspoons  thyme
  2             pounds  lean boneless pork roast
 

Preparation:

Combine the soy sauce, sherry, garlic, and spices in a plastic locking bag and mix well. Place the pork in the bag and marinate in the refrigerator for 10 to 12 hours. Heat the oven to 325 degrees. Remove the pork from the marinade, discard the marinade, and roast the pork for 2 hours. Let the roast rest 15 minutes before slicing. 8 servings/Serving size: 4 oz
