Mom's Classic Meatloaf

Ingredients:

   1      pound         lean ground chuck
     1/2  pound         ground pork
   1      can           tomato sauce -- (8 ounce)
   2      large         eggs -- beaten
   1      cup           breadcrumbs
     1/2                onion -- chopped
   3      tablespoons   minced parsley
   3      tablespoons   worcestershire sauce
   2      tablespoons   tamari sauce
   2      teaspoons     dijon mustard
                        salt & black pepper
   1      teaspoon      garlic salt
     1/2  cup           parmesan cheese
 

Preparation:

In large bowl mix together beef, pork, tomato sauce, eggs, breadcrumbs, onion, parsley, Worcestershire, tamari, mustard, salt and pepper and garlic salt. Using your hands, blend until well mixed. Lightly pack mixture into a glass loaf pan. Sprinkle 1/4 cup parmesan over top. In microwave, cook uncovered 5 minutes on high. Rotate dish 1/2 turn. Cook another 5 minutes. Sprinkle with remaining parmesan. Rotate another 1/2 turn and cook 5 minutes. Remove from microwave. Cover with foil and let meat loaf stand 10 minutes before serving. Approximately 12-15 minutes.
