Latin Pork Kabobs

Ingredients:

     1/4           cup  fresh lime juice
     1/4           cup  corn oil
     1/4      teaspoon  ground coriander
     1/4           cup  onion
  1         tablespoon  garlic
     1/4      teaspoon  black pepper
  1              pound  boneless lean pork
  1                cup  zucchini
  2               cups  red bell pepper
     1/2         pound  button mushrooms
 

Preparation:

Combine lime juice, corn oil, coriander, onions, garlic, and pepper add pork and toss to mix well cover and chill for 1-8 hours drain well, reserving marinade alternately skewer pork, zucchini, bell peppers, and mushrooms broil or grill for 20-25 minutes, basting often serve hot
