Grilled Pork Skewers

Ingredients:

  2                     green mangoes
     1/2    tablespoon  crushed red pepper flakes
     1/4           cup  pineapple juice
     1/2    tablespoon  white vinegar
     1/8      teaspoon  turmeric
     1/8      teaspoon  ground cumin
     1/8      teaspoon  curry powder
     1/8      teaspoon  chili powder
  1         tablespoon  minced garlic
                        MAIN INGREDIENTS
  1              pound  pork tenderloin -- trimmed of fat and
                        cut into 1" cubes
  1                     red bell pepper -- seeded and cut into
                        1" squares
     1/2         large  red onion -- cut into chunks, up
                        to 1
                        Salt and pepper to taste
  6                 8"  bamboo skewers -- up to
 

Preparation:

Make the marinade by peeling one of the green mangoes and slicing the fruit away from the pit. Put the fruit into a blender, or food processor, with the pepper flakes, pineapple juice, vinegar, turmeric, cumin, curry powder, chili powder, and garlic. Puree well. Pour the marinade over the pork cubes, cover and refrigerate for about 4 hours. Peel the second mango and cut the fruit away from the pit, then cut it into 1" cubes. Remove the meat from the marinade, leaving as much marinade as possible on the cubes. Thread the pork cubes and the pieces of mango, red pepper, and onion onto the skewers. Season with the salt and pepper. Grill over medium heat until the pork is cooked, about 5-7 minutes per side.
