Wonderful Artichokes

Ingredients:

  3                     artichokes -- stems and all points trimmed
  1                cup  red wine
  2               cups  chicken stock -- from cubes
  2              small  ripe tomatoes -- coarsely chopped
  1           teaspoon  dried basil
     1/2      teaspoon  dried thyme
     1/4      teaspoon  dried rosemary
  1                     jalapeno -- halved
  2              large  garlic cloves -- minced
  2             medium  shallots -- chopped
  1           teaspoon  lemon juice
  1         tablespoon  soy sauce
     1/4      teaspoon  sesame oil
     1/4      teaspoon  pepper
 

Preparation:

Place artichokes, bottom side down, in burner proof 1 1/2-quart casserole. In bowl, mix together remaining ingredients; add to casserole; bring to boil on top of stove. Cover tightly; cook in 350 degree oven for 1 1/4-1 1/2 hours depending on size of artichokes. Cool in liquid. For first course, serve cold in halves; as appetizer, serve quartered. Delightful!
