Wheat Berry, Tangerine, And Bean Salad

Ingredients:

  1                     tangerine
  6        Tablespoons  tangerine juice
  1 1/2           Cups  cooked wheat berries
  3        Tablespoons  cider vinegar
  1 1/4           Cups  cooked or canned cannellini beans -- drained and
                        rinsed
  1         Tablespoon  prepared spicy brown mustard
  1         Tablespoon  soy sauce
  1                Cup  diced jicama
     1/4      Teaspoon  salt
     1/2           Cup  chopped green bell pepper
     1/4      Teaspoon  pepper
     1/4           Cup  sliced scallion
  2        Tablespoons  chopped cilantro (or parsley)
 

Preparation:

Using a sharp knife, remove the peel and pith from the orange. Chop the orange and set aside. In a large bowl, combine the wheat berries, cannellini, jicama, bell pepper, scallion, and coriander. In a small bowl, combine the remaining ingredients. Pour over the salad and toss to combine.
