Tropical Fruit Salad

Ingredients:

  2        tablespoons  lime juice
  1         tablespoon  honey
  1         tablespoon  minced shallot
     1/4      teaspoon  salt
     1/8      teaspoon  cayenne pepper
  3        tablespoons  extra-virgin olive oil
  1                     cantaloupe
  1              small  papaya
  2                     mangos
  2                     kiwi fruit
  1                     lemon's grated zest
  1                     lime's grated zest
 

Preparation:

In a small bowl, whisk together lime juice, honey, shallot, salt and cayenne. Whisk in oil; cover and refrigerate. Slice cantaloupe and papaya in half, remove seeds and peel. Cut cantaloupe into 1" cubes. Slice papaya into 1/2-inch thick strips. Peel kiwifruits, cut in half lengthwise, and slice crosswise into 1/4-inch thick pieces. In a large bowl, combine fruits and zest; cover and refrigerate 2 hours. Pour dressing over fruit and stir gently. Divide among chilled salad plates and serve immediately.
