Cold Peanut Noodles

Ingredients:

  1              pound  whole-wheat spaghetti
  2        tablespoons  sesame oil
  1         tablespoon  fresh minced ginger or 2 tsp powdered
                        -- ginger
  1         tablespoon  chopped garlic
     1/4           cup  natural peanut butter
  2        tablespoons  soy sauce
  2        tablespoons  rice vinegar
  1         tablespoon  lemon juice
     3/4           cup  chopped green onion
  1                cup  chopped -- seeded cucumber
  1                cup  chopped peanuts
 

Preparation:

Cook spaghetti according to package directions and drain. Whisk together remaining ingredients except onion and cucumber. Mix dressing with cooked pasta. Add onion and cucumber and mix gently. Chill in refrigerator, covered, for several hours before serving. Sprinkle 2 tablespoons chopped peanuts over top of individual serving of noodles. In some menus, one Starch or one Meat Substitute serving has been used in place of the Fat-Free (Skim) Milk serving.
