Ramen Noodle Salad

Ingredients:

  2               Cups  water
  1            Package  chicken-flavored Ramen noodles -- (3-ounce)
  1           Teaspoon  butter
     1/4           Cup  finely chopped celery
     1/4           Cup  shredded carrots
     1/4           Cup  thinly sliced green onions
  1         Tablespoon  finely chopped green pepper
  1           Teaspoon  lemon juice
  1           Teaspoon  soy sauce
  2        Tablespoons  mayonnaise
 

Preparation:

Bring water to a boil. Crumble noodles, and add to water; stir in seasoning packet. Return to a boil and cook 2 minutes, stirring often. Drain. Combine noodles and butter, stirring until butter melts. Add celery and remaining ingredients, stirring gently to coat. Cover and chill 3 to 4 hours. Makes 2 servings.
