Ingredients:

  1 1/3         pounds  potatoes -- (4 medium), cut in
                        -- 3/4 " cubes
  1                can  black beans -- (15 ounces),
                        -- thoroughly rinsed
                        and drained
  1                can  vacuum packed whole kernel corn -- (7 ounces), drained
  1                cup  tomatoes -- diced
     1/2           cup  green onions with tops -- sliced
                        lime vinaigrette
  3        tablespoons  vegetable oil
  2 1/2    tablespoons  bottled or fresh lime juice
  1 1/2    tablespoons  bottled mild jalapeno sauce
  1 1/2      teaspoons  chili powder
     1/2      teaspoon  salt
 

Preparation:

In 3-quart saucepan cook potatoes, covered, in 2 inches boiling water 10 to 12 minutes, just until tender. Drain and cool. Meanwhile, prepare Lime Vinaigrette. Add potatoes and remaining ingredients to vinaigrette. Toss gently to mix thoroughly. LIME VINAIGRETTE In large bowl whisk vegetable oil, bottled or fresh lime juice, bottled mild jalapeno sauce*, chili powder and salt. * You can substitute 1 to 1 1/2 teaspoons hot pepper sauce and 1 1/2 tablespoons water for the jalapeno sauce.
