Ingredients:

     1/4           cup  rice wine vinegar
  1           teaspoon  dijon mustard
     1/4           cup  peanut oil
  2          teaspoons  sesame oil
  1                cup  sliced water chestnuts
  2          teaspoons  fresh ginger root
  1                cup  pineapple
  1              pound  bay shrimp
  1                     butter lettuce
     1/2           cup  scallions
  1           teaspoon  sesame seeds
 

Preparation:

combine lemon juice, vinegar, and mustard-mix well whisk in peanut and sesame oils-mix well combine water chestnuts, ginger, pineapple, and shrimp combine with dressing mixture-toss to mix well arrange butter lettuce leaves onto a serving platter or individual salad plates spoon the shrimp mixture on top of the lettuce leaves garnish with minced scallions and sesame seeds serve slightly chilled or at room temperature
