Nanny's Salad Dressing

Ingredients:

  2               cups  olive oil
  1                     lemon** -- juice of
  1           teaspoon  oregano
  1           teaspoon  basil
  1              large  garlic clove -- minced
                        salt and pepper
 

Preparation:

**Use more or less lemon juice and garlic to taste. We use EXTRA VIRGIN, COLD PRESSED OLIVE OIL for salads. It is expensive but the best you can buy. We prefer two cloves of garlic to this mix. This dressing will keep several days if kept covered and away from heat. It keeps indefinitely in the refrigerator. Just be sure to remove it from the refrigerator about an hour before using as it will solidify, somewhat.
