     1/4           cup  fresh lemon juice
     1/4           cup  sweet red onion
     1/4      teaspoon  salt
     1/4      teaspoon  white pepper
     1/4      teaspoon  black pepper
  1           teaspoon  flat-leaf parsley
     1/2      teaspoon  sugar
  12            ounces  light tuna in water
  1                cup  fresh green beans
  4                     red potato
  16                    green olive
  8                     plum tomato
  1              pound  mixed greens
 

Preparation:

combine olive oil, vinegar, lemon juice, onions, salt, white pepper, black pepper, parsley, and sugar in a blender or food processor process until well blended, set aside arrange tuna, green beans, potatoes, olives, tomatoes, and mixed greens onto a lettuce-lined platter lightly moisten with the dressing mixture garnish with quartered hard-boiled eggs, capers, and parsley serve chilled
