Marinated Tomato Salad

Ingredients:

  12                    ripe Italian plum tomatoes
  1                     red onion -- halved and thinly
                        sliced
     1/4           cup  red wine vinegar
  1         tablespoon  balsamic vinegar
  1         tablespoon  extra-virgin olive oil
  1         tablespoon  Watkins Basil Liquid Spice
     1/4      teaspoon  Watkins Garlic Liquid Spice
     1/4      teaspoon  Watkin Black Pepper
                        salt -- to taste
                        lettuce leaves
 

Preparation:

To prepare tomatoes, slice in half lengthwise, core, and cut into thirds or quarters (depending on how large the tomato is). In large salad bowl, combine all ingredients except lettuce. Toss gently until mixed. Cover and let stand at room temperature for 1 hour. (If preparing in advance: store, covered, in the refrigerator but return to room temperature before serving.) Serve over a bed of lettuce. Makes 6 servings.
