Macaroni Shrimp Salad

Ingredients:

   4 1/2  cups          water
   1 1/2  pounds        unpeeled medium shrimp
   2      cups          cooked elbow macaroni
   1      cup           frozen English peas -- thawed
   2                    hard-cooked eggs -- chopped
   1      medium        green pepper -- chopped
     1/4  cup           chopped pimiento-stuffed olives
   2      tablespoons   chopped onion
   1      cup           mayonnaise or salad dressing
     1/2  tablespoon    salt
     1/8  teaspoon      pepper
                        Lettuce leaves
                        Tomato wedges -- (optional)
 

Preparation:

Bring water to a boil; add shrimp, and cook 3 to 5 minutes. Drain well; rinse with cold water. Chill. Peel and devein shrimp. Combine shrimp, macaroni, peas, eggs, green pepper, olives, pimiento, and onion; toss well. Combine mayonnaise, salt, and pepper; pour over shrimp mixture, tossing gently. Chill. Serve salad on lettuce leaves; garnish with tomato wedges, if desired.
