Luncheon Spinach Salad

Ingredients:

  1                cup  spinach leaves -- washed drained and
                        -- torn
  1              ounce  reduced-fat cream cheese -- chilled
     1/2           cup  sliced fresh strawberries
  1         tablespoon  slivered -- toasted almonds
  1         tablespoon  balsamic vinegar
  1           teaspoon  extra-virgin olive oil
 

Preparation:

Arrange the spinach leaves on a plate. Pinch off pieces of cream cheese and roll into small balls, each about the size of a pea (cold cream cheese works best). Combine the cheese balls with the strawberries. Spoon the sliced berries and cream cheese balls onto the spinach leaves. Sprinkle with almonds, drizzle with vinegar and oil, and serve. 1 serving
