Lowfat Potato Salad

Ingredients:

  5               cups  cooked -- cubed potatoes
  1                cup  fat-free mayonnaise
     1/4           cup  chopped onion
  2        tablespoons  chopped green pepper
  1           teaspoon  salt
     1/4      teaspoon  pepper
     1/2           cup  chopped celery
  2        tablespoons  chopped pimento
 

Preparation:

Sprinkle salt and pepper over hot cubed potatoes. Add fat-free mayonnaise and toss lightly. Chill. Combine celery, onion, pimento, and green pepper. Add to salad. Toss.
