Italian Salad With Artichokes

Ingredients:

  1         tablespoon  red wine vinegar
                        salt & pepper to taste
  1                jar  marinated artichoke hearts -- (6 to 6-1/2 oz.)
  1                can  garbanzo beans -- (8-3/4 oz.) drained
  1             medium  tomato -- cut into chunks
  6               cups  packaged italian salad mix or desired
                        greens
 

Preparation:

Place salad greens in medium-sized bowl . Drain artichoke hearts, reserving 1/4 cup of marinade in a 1 cup measure; discard remaining marinade. Add artichoke hearts, garbanzo beans and tomatoes to greens. Mix vinegar into artichoke marinade, season with salt and pepper. Pour over salad and toss well.
