Ingredients:

  1             medium  cucumber -- peeled and coarsely chopped -- (about 1 cup)
  8 3/4         ounces  garbanzo beans -- drained
 25             ounces  sliced ripe olives -- drained
     1/2           cup  croutons
     1/4           cup  plus 2 tablespoons italian dressing with parmesan
 

Preparation:

In a salad bowl, toss together lettuce, cucumber, garbanzo beans, olives and croutons. Add dressing and toss well. Prep Time: 10 minutes Makes: 4 servings
