Holiday Salad

Ingredients:

  2                     carrots -- peeled and sliced,
                        -- up to 3
     1/2         pound  fresh green beans
  3             stalks  celery -- sliced
  1                     cucumber -- peeled and sliced
  6              large  radishes or 12 small -- sliced
  1            package  cherry tomatoes
     1/2           cup  black olives
     1/4           cup  oil -- preferabley olive
  2        tablespoons  red wine vinegar
  1         tablespoon  chopped green onions
  1              clove  garlic -- minced
     1/2      teaspoon  paprika
     1/4      teaspoon  salt
     1/4      teaspoon  pepper
                        parsley
 

Preparation:

Steam carrots and green beans until tender. Cool. On a large platter, arrange the vegetables. Sprinkle the black olives over the top of the veggies. Vigorously stir the oil, vinegar, green onions, garlic, paprika, salt and pepper then pour over the platter. Garnish with parsley.
