Gorgonzola And Walnut Salad

Ingredients:

                        ***DRESSING***
  1         tablespoon  dijon mustard
  3        tablespoons  white wine vinegar
  1         tablespoon  fresh lemon juice
     1/2           cup  walnut oil
     1/4      teaspoon  salt
     1/4      teaspoon  freshly ground pepper
                        ***SALAD***
  1               head  romaine lettuce -- torn
     1/2         pound  gorgonzola or other blue-veined cheese
  1                cup  celery -- thinly sliced
  1                cup  coarsely chopped walnuts
  1                     red delicious apples -- thinly sliced
 

Preparation:

Put all dressing ingredients in a jar. Cover and shake until slightly thickened, creamy, and well combined. Set aside. In a salad bowl, place lettuce, cheese, celery, apple and walnuts. Add just enough dressing to coat the lettuce.
