Ingredients:

  6             ounces  pineapple chunks -- drained
  3             ounces  pitted dates
  1 1/4         medium  carrots -- thinly sliced
     3/4                orange -- peeled and sliced
     3/4                banana -- peeled and sliced
  1         tablespoon  plus 2 teaspoons honey
  2 1/2      teaspoons  white wine vinegar
  2 1/2      teaspoons  lime juice
  1 1/4      teaspoons  vegetable oil
     3/4      teaspoon  lime zest -- grated
 

Preparation:

Combine first 5 ingredients in a large bowl. Combine remaining ingredients in a jar with a tight fitting lid. Shake vigorously and pour over fruit. Chill until ready to serve.
