Ingredients:

  1 1/2         Pounds  red pottoes 2 to 3 inches -- Thinly Sliced
     1/4           Cup  water
     1/4           Cup  olive oil
  3        Tablespoons  white wine vinegar
  2          Teaspoons  dijon must ard
     1/2      Teaspoon  dry tarragon
     1/8      Teaspoon  pepper
  3                     green onions with tops -- thinly sliced
  3        Tablespoons  chopped parsley
                        salt
                        spinach or lettuce leaves Optional
 

Preparation:

in 2 quart microwave safe dish,combine potatoes and water.Cover and Microwave on high (100% power) 5 minutes.Stir throughly with rubber spatula Microwave on high 3 to 5 minutes long er or until potatoes are tender when tested with a fork.In small bowl combine oil,vinegar,mustard,tarragon and pepper.mixing well.Pour over potatoes.Add green onions and parsley.Toss lightly with rubber spatula to combine.add sdalt to taste.Arrange spinach leaves on serving plate.spoon potato salad on top serve warm
