FOUR-BEAN SALAD

Ingredients:

   1      package       frozen cut green beans -- (9 oz.)
   1      package       frozen cut wax beans) -- (9 oz.)
     1/4  cup           olive oil
     3/4  cup           wine vinegar
     1/2                lemon -- Juice of
   2      cloves        garlic -- crushed
   1      teaspoon      dried oregano leaves
   2      teaspoons     sugar
   1      can           Garbonzo beans -- drained (15 oz.)
   1      can           red kidney beans -- drained (15 oz.)
   1      small         sweet onion -- finely chopped
                        Lettuce -- (optional)
 

Preparation:

Cook green and wax beans according to package directions. Let cool. In a small bowl combine oil, vinegar, lemon juice, garlic, oregano, and sugar and mix well. In a large bowl, combine the four beans, onion, and celery and pour oil and vinegar mixture over them. Toss gently. Chill for several hours, or overnight. If desired, drain beans and serve in a lettuce-lined bowl. Serves 10 to 12.
