Curried Turkey Salad

Ingredients:

  1                cup  regular -- low-fat, or nonfat
                        mayonnaise
  2        tablespoons  fresh lemon juice
  1         tablespoon  curry powder
     1/4      teaspoon  black pepper
  1              pound  fully-cooked deli turkey breast -- cut into 1-inch
                        cubes
  2                     celery stalks -- chopped
  1                     tart green apple -- cored, cut into
     1/2         small  red onion -- finely chopped
                        butter lettuce leaves
 

Preparation:

Mix mayonnaise, lemon juice, curry powder and pepper in small bowl to blend. Combine turkey, celery, apple and red onion in large bowl. Add dressing and toss to coat. Arrange lettuce leaves on plates. Spoon salad over and serve. Prep Time: 20 minutes Makes: 4 servings This salad is also delicious sandwiched between two slices of your favorite bread with a slice of tomato.
