Ingredients:

     1/3  cup           cider vinegar
   1      tablespoon    sugar
   2      tablespoons   water
   1      tablespoon    vegetable oil
     1/4  teaspoon      salt
     1/4  teaspoon      pepper
   4      cups          peeled sliced cucumber
     1/2  cup           vertically sliced red onion
 

Preparation:

Combine first 6 ingredients in a bowl; stir well with a whisk. Add cucumber and onion; toss well to coat. Cover and chill at least 3 hours.
