Cucumber and Mint Salad

Ingredients:

   6      cups          sliced cucumbers
   1      small         green bell pepper -- diced
   3                    green onions -- sliced
     1/4  cup           minced mint
     1/4  cup           lemon juice
   1      tablespoon    olive oil
   2      tablespoons   balsamic vinegar
                        fresh ground pepper
   1      dash          salt -- optional
 

Preparation:

1. Combine the cucumbers, peppers, onions, and mint in a salad bowl.

2. In a separate bowl, whisk together the remaining ingredients.

3. Toss with the vegetables and serve.
