Crunchy Waldorf Salad with Yogurt Dressing

Ingredients:

  4               cups  chunked cooked chicken
  2                     tart red apples -- cored and diced
  2                     firm red pears -- cored and diced
     1/2           cup  chopped red cabbage
  1                cup  low-fat yogurt
  1                cup  reduced-fat mayonnaise
  2              tbsp.  grainy mustard
                        Salt and pepper to taste
  1               head  Boston lettuce
     1/2           cup  chopped Brazil nuts
                        Paprika
 

Preparation:

1. In a large bowl, combine the chicken, apples, pears and red cabbage. In another bowl, mix the yogurt, mayonnaise and mustard, pour over the chicken mixture, and toss. Season with salt and pepper. Cover and chill for at least 1 hour. 2. Separate the lettuce into 6 leafy cups and divide the chicken mixture among the lettuce cups. Top with a sprinkling of chopped nuts and a dash of paprika. Serve cold.
