Creamy Lemon-Dill Pasta Salad

Ingredients:

  2               cups  fusilli or rotini pasta
     1/2           cup  Mayonnaise
     1/4           cup  sour cream
     1/4           cup  chopped fresh dill (or 2 teaspoons dried)
  2        tablespoons  lemon juice
  2          teaspoons  grated lemon rind
  1         tablespoon  dijonnaise mustard
     1/2      teaspoon  salt
     1/4      teaspoon  pepper
     1/2                green -- red and yellow
                        peppers, in thin strips
     1/4           cup  chopped red onion
 

Preparation:

1) Cook pasta per package directions; rinse with cold water and drain well. 2) In large bowl combine mayonnaise, sour cream, dill, lemon juice, lemon rind, and Dijonnaise. 3) Stir in salt and pepper. 4) Add pasta, peppers and onion; toss to coat evenly. Tip: Any chunky pasta (radiatore, penne, macaroni) can be substituted for fusilli. Serving Suggestion: Serve in a lettuce lined bowl and garnish with chopped fresh dill or parsley.
