Citrus Romaine Salad With Strawberries

Ingredients:

  2                     navel oranges
  1         tablespoon  sherry vinegar
  1         tablespoon  honey
  1 1/2      teaspoons  vegetable oil
     1/4      teaspoon  salt
     1/8      teaspoon  pepper
  5               cups  tightly packed shredded romaine lettuce
  1                cup  halved fresh strawberries
     1/2           cup  vertically sliced purple onion
 

Preparation:

Peel and section oranges over a small bowl; squeeze membranes to extract juice. Set sections aside; reserve juice, and discard membranes. Combine 2 tablespoons reserved juice, vinegar, and next 4 ingredients; stir well with a wire whisk. Combine lettuce, strawberries, and onion in a large bowl; toss gently.
