Carrot Orange Salad With Fresh Dill

Ingredients:

  1 1/4         pounds  carrots -- grated
  2        tablespoons  balsamic vinegar
     1/2           cup  fresh orange juice
     1/2      teaspoon  grated orange zest
  1                     orange -- segmented or
  1        small   can  mandarin orange segments -- drained
  2        tablespoons  chopped fresh dill -- divided
 

Preparation:

Combine carrots, vinegar, orange juice, and orange zest in a serving bowl. Stir to combine. Add orange segments and 1 tablespoon dill. Lightly toss. Cover and chill thoroughly. Just before serving, sprinkle with remaining 1 tablespoon dill.
