Apple-Beet Salad

Ingredients:

  2               cups  shredded or chopped apple -- unpeeled (granny
                        -- smith work well)
  1                can  whole beets -- drained and
                        -- shredded or
                        -- chopped, (15-oz)
                        
  1              pound  cooked beets -- chopped
     3/4           cup  sliced celery
  1         tablespoon  lemon juice
  1         tablespoon  honey
                        lettuce leaves
  3        tablespoons  chopped walnuts -- toasted
 

Preparation:

Combine all ingredients except the lettuce leaves and walnuts, tossing gently. Spoon out each serving onto lettuce leaves and sprinkle with walnuts to serve. 6 servings/Serving size: 1/2 cup
