Almond-Flavored Fruit Salad

Ingredients:

  1                cup  part-skim ricotta cheese
  4          teaspoons  sugar substitute
     1/2      teaspoon  almond extract
  2        tablespoons  skim milk
  4               cups  watermelon balls
  4               cups  blueberries -- rinsed and drained
 

Preparation:

Combine the cheese, sugar substitute, and almond extract in a small bowl and beat until well mixed. Gradually add the milk and continue beating until smooth. Combine the watermelon and blueberries. Divide the fruit into 6 serving dishes. Pour 2 tablespoons of the cheese mixture over each dish. This dish can also be served in a hollowed-out watermelon shell. Place the cheese mixture in a glass bowl inside the shell and arrange the fruit around the glass bowl. Let guests drizzle their own cheese on their fruit.
