Spicy Rice

Ingredients:

   1 1/2  tbls.         vegetable oil
   1      small         onion -- minced
   1      stick         cinnamon -- (3-inch)
   1      whole         clove
   1                    cardamom seed
   1 1/2  c.            uncooked regular rice
     1/2  tsp.          ground turmeric
   1      Pinch         ground ginger
   1      Pinch         ground allspice
   3      c.            hot water
     1/2  tsp.          salt
 

Preparation:

Heat oil in a heavy saucepan; add onion, cinnamon, clove, and cardamom seed. Saute until onion is tender. Add rice, turmeric, ginger, and allspice; cook over medium heat 10 minutes, stirring frequently. Add water and salt; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Remove whole spices.
