Savory Pork Chop and Italian Rice

Ingredients:

  16            ounces  pork center loin -- 1/2" thick, trimmed
                        of fat
     1/3           cup  green bell pepper -- chopped
     1/3           cup  onion -- chopped
     1/4           cup  celery -- chopped
  1 2/3           cups  water
     1/4      teaspoon  dried Italian seasoning
     1/8      teaspoon  pepper
  1        (8 oz.) can  tomato sauce
  1                cup  rice, parboiled -- uncooked
 

Preparation:

Spray medium nonstick skillet with nonstick cooking spray. Brown pork chops over medium-high heat. Remove pork chops from skillet. add bell pepper, onion and celery to skillet; cook and stir until crisp-tender. Add remaining ingredients except rice and pork chops; bring to a boil. Stir in rice; top with pork chops. Cover; simmer 20 to 25 minutes or until rice is cooked and pork chops are tender. 4 Servings.
