Rice Pilaf With Peppers And Pinenuts

Ingredients:

   2      tablespoons   margarine -- hollywood
   8      cloves        garlic -- peeled &thinly
                        -- slice
   2      cups          chicken broth
   1      cup           long-grain rice
     1/2  cup           red bell pepper -- finely diced
     1/4  cup           pine nuts -- toasted
 

Preparation:

In med. saucepan, melt margarine over med. heat. Add garlic and saute about 1 minutes, stirring constantly. Add broth and bring to boil. Stir in rice. When mixture returns to boil, reduce heat., cover, and simmer 15 minutes.Stir in peppers and pinenuts, cover, and simmer 5 minutes longer. Season with salt and pepper to taste.
