Parsley Rice

Ingredients:

  1                cup  long-grain white rice
  1           teaspoon  vegetable oil
     1/2         stalk  celery -- minced
  1              clove  garlic -- minced
     1/2           cup  minced flat-leaf parsley
     1/4      teaspoon  dried thyme leaves -- crumbled
 

Preparation:

Cook the rice according to package directions. In a medium nonstick skillet, heat the oil. Saute' the celery and garlic until they just begin to soften, 1-2 minutes. Stir in the parsley and thyme; cook, stirring constantly, until the vegetables are softened, about 2 m inutes longer. Add to the rice; toss to combin
