Orzo Pilaf

Ingredients:

  1                cup  orzo pasta
  2 1/3           cups  defatted stock -- beef chicken or
                        vegetable
  2                     scallions -- finely chopped
  1              clove  garlice finely minced
                        salt
                        pepper
                        tumeric to taste
  1         tablespoon  herbs dill oregano basil or parsely
  1           teaspoon  olive oil -- or olive oil spray
 

Preparation:

In a large deep sided skillet over medium heat,heat up oil and saute uncooked orzo,onion,garlic and seasonings.Cook a few minutes until the orzo changes color.Stir constantly.Add stock and bring to the boil.Cover and simmer 12 to 14 minut es until liquid is absorbed.Stir occasionally serve hot
