  2               Cups  Water
     1/2           Tsp  Chicken Bouillon Granules
  1                Cup  Rice (uncooked)
     1/2           Cup  Plain Nonfat Yogurt
  2                Tbs  Reduced-Calorie Creamy Italian Dressing
  1                 Tb  Fresh Parsley (chopped)
  1                     Jalapeno Pepper (seeded and chopped)
                        Vegetable Cooking Spray
     1/3           Cup  Monterey Jack Cheese
                        -- (reduced-fat and
                        shredded)
 

Preparation:

Combine 2 cups water and bouillon granules in a medium saucepan; bring to a boil. Stir in rice. Cover, reduce heat, and simmer 25 minutes or until rice is tender and liquid is absorbed. Stir in yogurt, dressing, parsley and jalapeno peper. Spoon mixture into a 1-quart baking dish coated with cooking spray. Bake at 350 degrees for 20 minutes. Top with cheese; bake an additional 5 minutes or until cheese melts.
