Herb And Lemon Rice

Ingredients:

     1/4  cup           chicken broth -- low fat & low sodium
   1      clove         garlic -- minced
   2      tablespoons   minced onion
     1/4  cup           minced carrot
   1 1/2  cups          short-grain brown rice
   3      cups          chicken broth -- low-fat low-sodium
   1      tablespoon    minced basil -- up to 2
   2      teaspoons     minced parsley
   1      tablespoon    lemon juice
     1/4  teaspoon      lemon rind
 

Preparation:

Heat the broth in a saucepan over medium-high heat. Add the garlic and onion and saut‚ for 3 minutes. Add the carrot and saut‚ for 3 minutes. Add the rice and saut‚ for 2 minutes. Add the broth, bring to a boil, lower the heat, cover, and simmer until the water is absorbed, about 40 to 45 minutes. Add the remaining ingredients and serve. 6 servings/Serving size: 1/2 cup
