Green Rice

Ingredients:

  1 1/2           cups  uncooked rice
  1 1/2           cups  fresh parsley -- chopped
  5                     green onions -- thinly sliced
  1                     green bell pepper -- cut in thin strips
  3                     eggs -- separated
  1 1/4           cups  fresh parmesan cheese -- grated
  1 1/2           cups  milk
     1/4           cup  butter -- melted, optional
                        salt and pepper to taste
 

Preparation:

Cook rice. Mix all ingredients together gently, except egg whites. Beat egg whites stiffly and fold into rice mixture. Spoon into buttered 9 x 13 casserole. Bake at 350 degrees for 45 minutes.
