Easy Spanish Rice

Ingredients:

                        cooking spray
     1/2           cup  green bell pepper -- chopped
     1/2           cup  chopped onion
  2               cups  tomato sauce -- no salt added
  2               cups  canned tomatoes -- no salt added,
                        undrained and chopped
  1                cup  rice -- long grained
                        uncooked
     1/4           cup  water
  1           teaspoon  chili powder
     1/2      teaspoon  dried oregano
     1/4      teaspoon  salt
     1/4      teaspoon  ground red pepper
     1/4      teaspoon  ground cumin
 

Preparation:

Coat a large nonstick skillet with cooking spray, and place over medium-high heat until hot. Add bell pepper and onion; saut‚ 5 minute or until tender. Add tomato sauce and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 25 minutes or until rice is tender and liquid is absorbed.
