Rice Balls

Ingredients:

  2               cups  rice -- (italian or regular)
                        -- cooked, cooled
  4                     eggs -- beaten
  1                cup  parmesan cheese -- grated
  1                cup  fresh parsley -- minced
                        pepper -- (to taste)
  2                     egg whites -- beaten
                        flavored bread crumbs
                        olive oil spray

  1                cup  mozzarella cheese -- diced
  1                cup  ricotta cheese
  4             slices  prosciutto -- diced

  2          teaspoons  olive oil
  2             cloves  garlic -- minced
                        chopped meat or sausage
  1                     onion -- chopped
     1/2           can  tomato paste
  1                cup  peas
                        ***FILLING #3***
  1              piece  mozzarella cheese
  1              piece  prosciutto
                        ***FILLING #4***
  2          teaspoons  olive oil
  2                     garlic cloves -- minced
  1                cup  spinach -- chopped
  1                cup  ricotta cheese
 

Preparation:

In a large bowl place cooked rice, 4 eggs, cheese, parsley and pepper and mix well with a wooden spoon. Place about 3 teaspoons of the mixture in your hand and make a small pocket with your finger and put about 1 teaspoon of one of the above mixtures and add a teaspoon more of the rice mixture. Touch your fingers to the egg whites as you roll the rice in your hand into a ball. Since your fingers have been applying the egg mixture to the outside of the rice balls, you can then roll them in the flavored bread crumbs to coat the entire ball. Place aside. Traditionally these rice balls are fried in a little olive oil and gently turned until golden borwn. I place them on a piece of greased foil that lines a large baking pan or cookie sheet and I then spray the rice balls with olive-oil spray and place them in a preheated 350 degree oven for about 35 minutes or until golden brown.
