Barley Pine Nut Pilaf

Ingredients:

  1                cup  pearl barley
  6        tablespoons  butter
  2             ounces  pine nuts -- (1/3 c.)
  1                cup  chopped green onions
     1/2           cup  chopped fresh parsley
     1/4      teaspoon  salt
     1/4      teaspoon  pepper
  3 1/3           cups  boiling chicken broth
 

Preparation:

Heat oven to 350 degrees. Rinse and drain barley. In a 10-inch skillet, heat butter and brown the pine nuts (slivered almonds also work well). Remove the nuts with a slotted spoon. Saute onions and barley until barley is slightly toasted. Off the heat stir in the nuts and remaining ingredients. Bake the pilaf for 1 hour and 10 minutes.
