Barley Basil Pilaf

Ingredients:

  2          teaspoons  vegetable oil
  1                cup  pear barley uncooked
  2               cups  chicken broth
     1/2      teaspoon  salt
     1/3           cup  minced fresh cinnamon
                        basil or plain basil
     1/4           cup  thinkly sliced green
                        onions
     1/8      teaspoon  ground nutmeg
 

Preparation:

Heat Oil in A 1 Quart Saucepan Over Medium Heat Just Until Hot, Not Smoking. Add Barley and Cook 5 Min. OR Until Browned, Stirring Constantly. Add Chicken Broth and Salt, Bring To A Boil. Cover and Reduce Heat and Simmer 30 Min. OR Until Barley Is Tender And Liquid Is Absorbed. Remove From Heat. Stir in Basil, Green Onions and Nutmeg.
