Almond Parsley Rice

Ingredients:

  1                cup  long-grained rice -- washed
  2             sprigs  parsley -- chopped
  3               cups  chicken stock
     1/2           cup  slivered almonds -- toasted
  2        tablespoons  unsalted butter
                        salt -- to taste
 

Preparation:

Combine the rice and stock in a saucepand and bring to a rolling boil. Turn heat back to medium and boil for 10 minutes. Test for doneness. If not tender, boil for another minute or so. Drain, wash with hot water, and combine with all other ingredients.
